O Opsófago em Destaque é João Paulo Vargas Carvalho, transportador, distribuidor e comerciante de queijo artesanal. João nasceu em Bambuí, Cidade Portal da Serra da Canastra. Radicou-se em Belo Horizonte há 23 anos, e é o caçula de quatro irmãos. Filho de bancário e de professora, teve uma educação tradicional no interior de Minas. Chegou a cursar o curso de Direito por algum tempo, mas não se graduou. Em 2014, sucumbiu aos desafios do empreendedorismo e criou sua própria empresa, o Armazém São Roque. Desde então, tornou-se um importante parceiro dos produtores de queijo artesanal de leite cru.

OPS – Explique como funciona sua parceria com os produtores de queijo artesanal.

JPV – O Armazém São Roque nasceu da ideia de se criar uma loja 100% virtual de queijos de leite cru mineiros. Neste sentido, iniciamos visitas a região da Canastra em abril de 2015. Com este mote, percebemos em nossos primeiros meses de prospecção na região da Canastra, que não havia transporte dedicado aos produtores associados à APROCAN. Identificada esta demanda, e com o incentivo dos produtores João Carlos Leite e Luciano Machado, iniciamos a operação logística entre a região da Canastra e Belo Horizonte no final do ano de 2015, com regularidade semanal. Este trabalho nos colocou em contato com as duas pontas da cadeia, produtores e lojistas, o que possibilitou a inserção de novos produtores no mercado de Belo Horizonte e de outras capitais.

OPS – Qual a importância do apoio logístico para o desenvolvimento da cadeia produtiva do queijo?

JPV – As regiões queijeiras e seus produtores, em sua maioria, tem pouco conhecimento de logística, a qual se limita basicamente ao modal terrestre. Por se tratar de produto artesanal e perecível, a logística de transporte deve ser regular e expressa. O termo “da porteira pra dentro” exemplifica nosso pensamento de que o produtor deve se preocupar apenas com a qualidade de sua produção, de seu rebanho e das melhorias técnicas agregadas a estes processos. Da “porteira pra fora” a solução deve ser criada por nós revendedores e parceiros, deixando o produtor rural se dedicar ao que sabe fazer de fato e também confortável por saber que seu queijo irá chegar ao destino de maneira rápida e confiável.

OPS – Quais as regiões atendidas atualmente?

JPV – Atendemos com nossa expertise em logística a região da Canastra, e já há conversas iniciadas com produtores do Serro e da região de Araxá. O portfólio do site agrega produtos de várias regiões queijeiras de Minas e em breve alguns produtos independentes não vinculados a regiões identificadas.

OPS – Há quanto tempo você começou esta atividade? Qual a avaliação que faz do trabalho desenvolvido até aqui? Quais os planos para o futuro?

JPV – Iniciamos as atividades em abril de 2015, com prospecção de produtores e estudos de viabilidade de venda pela internet. A operação logística e vendas via canal eletrônico (site) iniciaram-se em novembro do mesmo ano. A avaliação do trabalho é extremamente positiva, tanto do ponto de vista da logística quanto das vendas para nosso consumidor final. A demanda pelo serviço/produto só fez aumentar, o que cria uma expectativa de crescimento e de investimento bem acima do que esperávamos há um ano atrás, tornando nosso plano de ação formatado em novembro de 2016 obsoleto em apenas quatro meses de sua implementação. Nosso plano de crescimento inclui criação de pontos de coleta em São Roque de Minas e Piumhi (já executados), criação de ponto de coleta em Medeiros, implementação de estrutura dedicada de armazenamento em nossa sede situada em Nova Lima, construção de câmara de maturação no Bairro Santo Antônio (em fase de execução), adequação e ampliação de nossa frota (2018) e participação em cursos de qualificação voltados para manutenção e afinagem de queijos de leite cru, como o que já participamos e que foi ministrado pela Professora Delphine Gehant este ano em Belo Horizonte.

OPS – Além da logística, quais as outras atividades do Armazém São Roque?

JPV – Somos também uma loja 100% virtual de queijos de leite cru – não temos loja física. Trabalhamos apenas com queijos de leite cru, maturados e rastreáveis (ou seja, queijos com rótulo e identificação do produtor). Nosso foco é universalizar o acesso ao queijo artesanal mineiro dentro do Brasil, sempre divulgando informações do produto, da região e de seus artesãos. Somos chancelados pela APROCAN – Associação dos Produtores de Queijo da Canastra. Enviamos queijos para todo o Brasil e entregamos em Belo Horizonte, criando uma comodidade antes inexistente ou não formatada. Fomos pioneiros na produção de catálogo fotográfico de queijos de leite cru, não utilizamos bancos de imagem ou similares em nosso site. Todas as fotos que utilizamos em nosso e-commerce são produzidas por fotógrafos profissionais. Participamos esporadicamente de reuniões da referida associação, onde levamos um pouco de informação sobre a logística e outros assuntos relevantes aos produtores, além de absorver um pouco das dificuldades vivenciadas por estes. Esta proximidade gera um conhecimento inigualável de toda a cadeia.

OPS – Você foi um dos primeiros a trabalhar com e-commerce de queijos em Minas. Como você vê este mercado hoje?

JPV – O mercado vive uma expansão constante, seja pela qualidade do produto ou pela comodidade de se comprar pela internet. A resistência do brasileiro em se comprar pela rede vai diminuindo, e junto com ela também diminui a resistência da compra de alimentos por este mesmo canal. Veja só, comprar um eletrônico pela internet já é lugar comum para nós consumidores, mas comprar alimentos nem tanto. Vemos este crescimento com alegria, pois mostra que estamos no caminho certo. A questão sensível da venda de queijos artesanais pela internet é que nem todos os lojistas estão preparados para manter e cuidar do produto de maneira 100% adequada, o que pode gerar descontentamento por parte do consumidor. Além disto, o fato de haver gente inescrupulosa no ambiente virtual cria espaço para venda de produtos sem nenhuma rastreabilidade, de baixa qualidade sanitária ou até mesmo falsificados.

OPS – Está em tramitação na Assembleia Legislativa um projeto de lei que visa atualizar as regras de produção e comercialização dos queijos artesanais em Minas Gerais. Na sua opinião, o que pode ser feito em termos legislativos para beneficiar o produtor rural de queijo de leite cru?

JPV – Do ponto de vista do produtor, vejo que a maior dificuldade é a de se adequar às normas sanitárias modernas sem uma contrapartida de linhas de crédito específicas para este fim. Também percebo que as equipes dos órgãos competentes que fiscalizam a implementação destas normas deveriam ter em seus quadros pessoal capacitado exclusivamente para lidar com os produtores de queijo de leite cru. Outra dificuldade latente é a burocracia para emissão de documentos fiscais, o que muitas vezes tira o artesão de seu ofício e o força a dedicar tempo e energia a trâmites fiscais estranhos a sua realidade. Também devemos ressaltar, pelo menos no caso dos municípios da Canastra, a dificuldade de trânsito por algumas estradas de terra, que poderiam ser incluídas em planos de aceleração da economia da região.

OPS – Como você situa o queijo artesanal mineiro no cenário nacional em termos de qualidade e de oportunidades comerciais?

JPV – Em termos de qualidade, o queijo artesanal mineiro é provavelmente o melhor do Brasil. Este fato não se deve só a história do produto ou a sua qualidade intrínseca, mas ao trabalho de longo prazo executado por entidades como o Sebrae Minas e Aprocan, além da adequação dos produtores rurais que investem em estruturas modernas e aperfeiçoam seus conhecimentos. Do ponto de vista comercial, vejo o queijo mineiro de leite cru como sucesso absoluto, pois tem a aprovação de mercados muito exigentes. Além disso e o mais importante, gera prosperidade para os pequenos núcleos familiares que o produzem, mudança esta que cria uma quebra de paradigma sobre a produção artesanal. O exemplo desta prosperidade são as novas gerações de produtores que desistem de se mudar pra grandes centros urbanos (ou que retornam destes) e que vão se tornar a próxima geração de artesãos do queijo de leite cru mineiro. Este modelo de produção artesanal tem potencial tão grande que várias entidades e organizações tem procurado a região da Canastra buscando entender – e replicar em suas regiões de origem – o modelo de associativismo e de economia compartilhada que é tão profícuo em Minas Gerais.
