Um dos grandes símbolos da gastronomia mineira é paulista da cidade de Cubatão. Nelsa Trombino, proprietária do Xapuri, não nasceu em Minas, mas suas mãos parecem abençoadas pelo espírito local. Filha de italianos, desde criança ela acompanhava a mãe na beira do fogão. A grande fartura das porções de seu restaurante é herança dessa época. As receitas da cozinha mineira, no entanto, só chegaram mais tarde. Aos 22 anos, casou-se com Fábio Figueiredo e mudou-se para a fazenda dos sogros, em Lagoa da Prata, no interior de Minas. Costelas de porco, feijões com farinha, torresmos e couves passaram então a fazer parte de sua rotina. Depois vieram o lombo assado na panela e outras dezenas de pratos e doces típicos da roça.

Após um ano, o casal pôs o pé na estrada e morou em várias cidades até se fixar em Belo Horizonte, em 1980, com os três filhos, Fernanda, Fabiana e Flávio. Cozinhando apenas para amigos e familiares, sete anos depois, dona Nelsa decidiu abrir um estabelecimento. Comprou o imóvel e montou tudo à sua maneira, na região da Pampulha, que em pouco tempo se tornaria um endereço nacionalmente conhecido. Acordava às 3 da madrugada para fazer compras na Ceasa e cuidava da administração. Tanto esforço foi recompensado e hoje Dona Nelsa é referenciada como uma das grandes mestra cultura gastronômica mineira. O descuido da cegonha foi reparado em 2017. Dona Nelsa, a paulista de alma mineira, foi agraciada com a Cidadania Honorária do Estado. Um orgulho para Minas Gerais.
