Chengdu, capital da província chinesa de Sichuan, foi a primeira cidade asiática a entrar para o seleto grupo das Cidade da Gastronomia Unesco. Berço de uma cultura gastronômica ancestral, foi também o local escolhido para a realização do 7º Congresso Internacional Slow Food, encerrado em 1º de outubro último. A decisão de realizar o evento na China não foi aleatória e sim estratégica. Era o lugar certo na hora certa. Os temas centrais de discussão este ano foram clima, biodiversidade e nova economia. A China enfrenta o desafio de alimentar um quinto da humanidade com apenas 7% de superfície disponível para a agricultura. O impacto global das escolhas de seus quase 1.5 bilhões de habitantes acaba por definir, muitas vezes, os movimentos da geopolítica mundial num sentido ou noutro. Isto se aplica também ao sistema alimentar, responsável pela emissão de um quinto do total das emissões de gases do planeta, campeonato em que a China é campeã absoluta. Nada mais oportuno, conveniente e simbólico, portanto, do que debater estes assuntos com os chineses, na casa deles.

Nos últimos 15 anos, a China apresentou índices de crescimento sem precedentes. Em tese, esta prosperidade tem garantido aos chineses os recursos necessários para financiar políticas públicas de abastecimento alimentar.  Ocorre que há coisas que o desenvolvimento econômico não pode comprar. E uma hora a fatura chega, inexoravelmente. As contradições entre os programas agrícola e ambiental vem trazendo consequências não só para a China e países vizinhos. Todo o planeta recebe os efeitos dos modelos ali adotados. Se o problema afeta a todos, a solução deve ser construída por todos. Por esta razão, um congresso sobre mudanças climáticas na China, realizado com a colaboração do governo chinês e de ONG’s internacionais, é motivo de celebração e de esperança. O evento sinaliza um momento favorável para virar a chave e ligar a sustentabilidade em modo hard, com a inflexão de modelos centrados no capital e a adoção de arquiteturas políticas que privilegiem as relações humanas.

A adoção de modelos disruptivos, capazes de romper com a lógica de um processo de industrialização acelerado, nos parece improvável a curto prazo. Contudo, o desejo de trilhar novos caminhos é o primeiro passo. Com ele virão as mudanças comportamentais cotidianas, imprescindíveis para desencadear o processo de transformação. O Slow Food sabe disso. O que os mais de 400 ativistas de 90 países propuseram em Chengdu, foi tirar a gastronomia da cozinha e colocá-la no centro do debate sobre o clima, assumindo o papel de protagonista que lhe é de direito.

Há um grande caminho a percorrer, sem dúvida. A dimensão e a complexidade do setor gastronômico não permitem outra análise. Consideramos bastante apropriada a utilização, pelo Slow Food, do “efeito borboleta”, para traduzir seus novos desafios. Segundo esta elaboração, algo tão pequeno quanto o voo de uma borboleta pode causar um tufão do outro lado do mundo. De fato, o encontro de Chengdu nos mostra que estamos em um contexto de múltiplas variáveis, em que determinadas escolhas podem gerar reações em cadeia e causar efeitos de grande escala a longo prazo. A metáfora nos faz refletir, assim, sobre a relação de causa e efeito diante das possibilidades que a gastronomia proporciona, mas, sobretudo, nos convida a avaliar nossa responsabilidade pelas decisões que tomamos.

Ao final do Congresso, foi aprovada a Declaração de Chengdu, que teve a defesa de todas as forma de diversidade, a redução da desigualdade e o acesso ao conhecimento, como seus princípios orientadores . A Declaração estabelece oito caminhos para enfrentar os desafios e mudar o mundo através da comida. São eles:

  1. A comida boa, limpa, justa e saudável é direito de todos e não devemos desistir de lutar até que todas as pessoas do planeta tenham acesso a ela;
  2. O mundo é nosso lar e nossa ação é global. Nossa rede não tem fronteiras. Rejeitamos, portanto, qualquer forma de exclusão política, econômica ou social que criminaliza pessoas que migram em razão de conflitos, violência, discriminação, despejo, pobreza e calamidades naturais. Lutamos contra ideias e ações que privam os segmentos vulneráveis da população de seus direitos e que desrespeitam indígenas, mulheres, crianças e idosos. Sobretudo, reconhecemos, apoiamos e promovemos a contribuição fundamental das mulheres em termos de conhecimento, trabalho e sensibilidade, no âmbito da família, da comunidade e nas esferas sociais;
  3. A proteção ambiental é a prioridade absoluta do trabalho de ativistas, fazendeiros, pastores, pescadores, artesãos, estudiosos e cozinheiros. A produção, distribuição e consumo de alimentos não se opõe ao direito de desfrutar de um ambiente saudável e seus benefícios para as gerações futuras;
  4. A diversidade genética, cultural, linguística, geracional, sexual e religiosa é o maior patrimônio das pessoas e da comunidade;
  5. A divisão injusta de riquezas e oportunidades causa sofrimento e discriminação, por isso deve ser considerada em cada prática ou tomada de decisão – começando pelo setor do trabalho – para que se alcance uma distribuição mais justa entre mulheres e homens do nosso planeta;
  6. O acesso ao conhecimento é um direito de todos e o conhecimento e habilidades tradicionais devem ter a mesma dignidade que o aprendizado acadêmico. Somente pessoas informadas e conscientes podem fazer escolhas livres, ponderadas e razoáveis.;
  7. Nossas escolhas diárias à mesa podem contribuir para mudar o mundo. A implementação de pequenos gestos cotidianos são os que o Slow Food considera mais importantes e necessários;
  8. Trabalhamos para garantir que o Slow Food estenda no futura esta compreensão e estes direitos não apenas aos seres humanos, mas a todos os seres vivos.
 Durante o Congresso, sob o sugestivo slogan “Levante seu garfo contra a mudança climática”, o Slow Food lançou o Menu for Change (Menu de Mudanças), primeira campanha internacional de comunicação sobre o tema. Além de conscientizar as pessoas para a mudança de hábitos, a campanha visa também arrecadar recursos para financiar as ações do movimento.
